Banana Drop Cookies

Ingredients

2 ¼ Cup Sifted Flour
1 Cup Sugar
2 tsp. Baking Powder
¼ tsp. Baking Soda
¾ tsp. Salt
2/3 Cup Shortening
2 Eggs
1 Cup Mashed Bananas (2-3)
1 tsp. Vanilla

Directions

  1. Sift together flour, sugar, baking powder, soda, and salt into mixing bowl.
  2. Cut in shortening.
  3. Add eggs, bananas, and vanilla. Beat until thoroughly blended. Drop by tablespoon full about 1 ½ apart onto ungreased cookie sheet. Bake at 375 about 12-15 minutes, or until cookies are golden brown.
  4. If desired, use ¼ tsp cinnamon and 1 T sugar mixture sprinkle on cookies before baking or add 12 oz of chocolate chips to batter.
