BBQ Chicken Quesadilla with Roasted Corn Salsa

Roasted Corn Salsa

Ingredients

2 ears corn, roasted on grill and taken off cobb

1 red pepper

small dice 1 jalapeno (seeded and chopped fine)

1 small onion small dice

cilantro, chopped

salt

pepper

Directions

  1. Combine all ingredients and season

 

BBQ Chicken Quesadilla

Ingredients

BBQ Sauce

Chicken Breast

Corn Salsa

2 flour tortillas

cheddar cheese

Directions

  1. Grill and let cool. Medium dice the chicken. Cook chicken breast, salsa, a little more bbq sauce all together and place between two flour tortillas with cheddar cheese. Cook on grill or flat top until tortillas are crispy and cheese is melted.
