BBQ Pork Chops with Spicy Corn and Black Bean Salsa

Here’s what I spent:
$3.22 on 4 boneless pork chops (on sale)
$2.00 on fresh corn
$1.50 on a can of black beans
$.99 package dirty rice (on sale)
$1.00 onion and seasoning

Ingredients:
1/2 cup vinegar
1/2 cup ketchup
1 cup water
1/2 cup chopped onion
2 small cloves garlic, minced
1 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons Worcestershire sauce
ground cayenne pepper to taste
3 tablespoons brown sugar
4 Boneless pork chops- pounded slightly
2 ears fresh corn on the cob, roasted or grilled
1 can black beans drained
1 package dirty rice (cooked to directions)
Splash Hot sauce
Chopped cilantro for garnish

Directions

  1. In a saucepan, mix first 10 ingredients. Bring mixture to a boil; reduce heat, cover, and simmer for 20 minutes, stirring occasionally. Pour sauce over pork chops in a large, deep bowl; cover and refrigerate for at least 4 hours. When ready to cook, arrange chops in a single layer in a large shallow baking dish or roasting pan. Pour sauce over chops. Bake, uncovered, at 350° for 1 to 1 1/2 hours, or until chops are tender, basting occasionally.
  2. Drain black beans and add to fresh roasted corn. Season with hot sauce and chopped cilantro- served as a base for bbq pork
