Beer can chicken with roasted corn and avocado salad.
Ingredients
For chicken:
1 roasting chicken
1 can of beer
1 Tbsp coriander
1 Tbsp chili powder
1 Tbsp herbs de Provence
1 Tbsp kosher salt
1 Tbsp black pepper
1 Tbsp ground yellow mustard
1 Tbsp garlic powder
3 Tbsp olive oil
For corn and avocado salad:
5 ears of corn,grilled and cut off the cob
3 avocados, diced
2 cups grape tomatoes
1 1/2 cups feta cheese
1/2 cup chopped cilantro
1 Tbsp honey
2 Tbsp sherry vinegar
4 Tbsp olive oil
Salt and pepper
1 Tbsp lime juice
2 tsp Dijon mustard
Directions
- In a salad bowl combine corn , avocado , tomatoes, feta cheese, and set aside . Whisk together mustard, honey , vinegar, cilantro, lime juice, and oil to make a vinaigrette. Add the dressing to the corn mixture and adjust seasoning with salt and pepper.
- For the chicken- preheat oven to 400. Mix seasonings in bowl.
- Rub the chicken inside and put with seasonings Pour 1/2 can or bottle of beer into the middle holder of the beer can chicken holder. If you have the type that holds the can only use 2/3 can instead of a full one Place well-seasoned chicken cavity down on the holder.
- Place in oven at 400 for 25 minutes. Reduce oven to 350 and roast as is Until thickest part of the chicken is 165 degrees on the meat thermometer.
