Beer Can Chicken with Corn Salad

Beer can chicken with roasted corn and avocado salad.

Ingredients

For chicken:

1 roasting chicken

1 can of beer

1 Tbsp coriander

1 Tbsp chili powder

1 Tbsp herbs de Provence

1 Tbsp kosher salt

1 Tbsp black pepper

1 Tbsp ground yellow mustard

1 Tbsp garlic powder

3 Tbsp olive oil

For corn and avocado salad:

5 ears of corn,grilled and cut off the cob

3 avocados, diced

2 cups grape tomatoes

1 1/2 cups feta cheese

1/2 cup chopped cilantro

1 Tbsp honey

2 Tbsp sherry vinegar

4 Tbsp olive oil

Salt and pepper

1 Tbsp lime juice

2 tsp Dijon mustard

 

Directions

  1. In a salad bowl combine corn , avocado , tomatoes, feta cheese, and set aside .  Whisk together mustard, honey , vinegar, cilantro, lime juice, and oil to make a vinaigrette. Add the dressing to the corn mixture and adjust seasoning with salt and pepper.
  2. For the chicken- preheat oven to 400. Mix seasonings in bowl.
  3. Rub the chicken inside and put with seasonings Pour 1/2 can or bottle of beer into the middle holder of the beer can chicken holder. If you have the type that holds the can only use 2/3 can instead of a full one Place well-seasoned chicken cavity down on the holder.
  4. Place in oven at 400 for 25 minutes. Reduce oven to 350 and roast as is Until  thickest part of the chicken is  165 degrees on the meat thermometer.
