Blade steaks are a quick and economical choice when cooking on a budget.
Ingredients
4 blade steaks, seasoned with garlic salt and fresh ground black pepper
1 tsp olive oil, plus 1 Tbsp
1 red onion, sliced
1 green pepper, sliced
6 mushrooms, sliced
1 yellow summer squash, diced (optional)
Oregano, to taste
1 tsp capers
2 cloves garlic, minced
½ tsp crushed red pepper
¼ cup white wine
1 fresh tomato, diced
½ cup tomato sauce
Directions
- Add 1 tsp olive oil to pan and heat to medium high. Sear steak for approximately 1 minute on each side. Remove from pan. Add 1 Tbsp olive oil, all the vegetables, garlic, oregano and capers. Simmer for approximately 5 minutes. Add wine and tomato sauce. Simmer and adjust seasoning. Pour over steak and serve.
