Nothing like a trip to the Farmer’s Market for fresh caught Salmon. I love Maggie’s and often swap recipes with Gary.
2 cedar planks, untreated- soaked for at least one hour in water
Ingredients
For the salmon
1 TBSP. lemon zest
1/1/2 sp. Fresh thyme
½ cup sugar
2 – 2 pound skin on salmon filets
2 TBSP. extra virgin olive oil
Sauce:
½ cup crème fraise
3 TBSP. minced fresh chives
1 ½ Lbs. horseradish (prepared)kosher salt and black pepper
Directions
- Mix ingredients and place in refrigerator until ready. Top salmon with sauce.
- Mix lemon zest, thyme sugar and oil, rub onto salmon. Either preheat oven to 400 degrees or grill at medium.
- Rub the salmon with thyme mixture and let rest in refrigerator or 20-30 minutes…. Grill or roast until salmon is 135 degrees
