Chilled Blueberry Soup

Ingredients

1 cup fresh or frozen unthawed blueberries
1/2 cup water
1/4 cup sugar
1/2 cup lemon juice
1 teaspoon ground coriander
1/4 teaspoon cinnamon
1/2 cup plain yogurt
1/2 cup sour cream
1/2 cup dry red wine

Directions

  1. Puree blueberries in blender until smooth. In medium saucepan, combine pureed blueberries, water, sugar, lemon juice, and spices. Cover and simmer over low heat for 10 minutes. Whisk in remaining ingredients, blending until smooth. Chill for several hours before serving. Makes about 6 servings, 1/2 cup each.
