Ingredients
3 cucumbers, peeled, sliced
1 red pepper, julienne
1 yellow pepper, julienne
1 sweet onion, thinly sliced
2- 3 tsp. soy sauce
2-3 TBSP. rice wine vinegar
2 TBSP. sugar
-1/3rd chili paste with garlic
2 TBSP. fresh lime juice
cup crushed peanuts
cup black sesame seeds
fresh mint diced for garnish
fresh bean sprouts for garnish
cut vegetables and set aside in bowl
Directions
- Combine soy sauce, rice wine vinegar, sugar, lime juice and chili paste. Toss into cucumber salad with crushed peanuts. Heap onto center of plate, sprinkle with sesame seeds and top with pinch of fresh bean sprouts and diced fresh mint.
