Ingredients
2 cups fresh strawberries, hulled
1 cup plain nonfat yogurt
2 cups Vanilla Ice cream
Garnish
Thyme blossom from flowering thyme sprig or mint sprigs
Directions
- This soup can be served as either a first course or a dessert. Other fresh berries, such as blueberries, raspberries or blackberries can be used in place of the strawberries.
Set aside 2 large perfect strawberries for the garnish. In a blender, combine the remaining strawberries, yogurt and ice cream and blend until smooth. Refrigerate about one hour. - Julienne the reserved strawberries. Pour the strawberry cream into shallow soup bowls. Garnish with the thyme flower or mint sprigs and cut strawberries.
