Curried Sweet Potato Latkes w/Fruit Chutney

Prepared by Chef Marty Glucklich of Veg Restaurant

Ingredients:

2 C. brown sugar
2 C. diced peaches
½ dried apricots
1 C. dates
½ C. golden raisins
½ C. water
½ C cider vinegar
½ t. turmeric
½ t. ginger

 

Directions:

  1. Add all ingredients to heavy-bottomed saucepan and heat over low, stirring constantly until thick.
  2. Turn heat to low and simmer 20 minutes or until the fruit is cooked and thick.
  3. Cool and eat

 

Yield: 3 Cups
