Fresh Herb Roasted Florida Red Potatoes

Ingredients

2 tbsp. olive oil
4 cloves garlic, minced
2 tbsp. chopped fresh rosemary
2 tbsp. chopped fresh thyme
1⁄2 tsp. salt
1⁄4 tsp. paprika
1⁄4 tsp. pepper
11⁄2 lb. Florida Red Potatoes, unpeeled and
quartered
Vegetable cooking spray

Directions

  1. Stir together olive oil, garlic, rosemary, thyme, salt, paprika, and pepper in medium bowl. Add potatoes, tossing gently. Place potatoes in a 13-x-9-inch pan coated with
    cooking spray.
  2. Bake at 400°F for 25 minutes or until tender, stirring every 10 minutes.
