Ingredients
2 cups arugula
2 romaine lettuce hearts, chopped
3 tablespoons balsamic vinegar
1/4 cup olive oil
1/2 teaspoon salt
1 teaspoon black pepper
6 ounces gorgonzola, crumbled
1 cup pitted fresh bing cherries
2 sirloin steaks, seasoned and grilled to medium rare—let rest 20 minutes before slicing
2 red onions- sliced thin and carmelized
Directions
1. Combine the two lettuces and set aside.
2. Combine the vinegar, olive oil, salt, pepper and bleu cheese. Toss with the lettuces.
3. Divide onto four plates . Lay steak slices around the top of the salad and top with red onions, extra cheese and croutons
