GROUPER SAINT CLAIRE DINNER SPECIAL at

Serve 1-2 persons
Ingredients
8 oz filet of red grouper
4 oz of flour
6 oz of egg whites
½ cup of milk
2 oz of almonds blanched and chopped
2 oz crushed pecans
2 oz coconut
4 oz of panco bread crumbs
Passion Fruit Reduction
1 cup passion fruit juice
1 pinch of Caribbean Jerk spices
Directions
- Dredge fish portion in 4 oz of flour and then in 6 oz of egg whites combined with ½ cup of milk (beaten together)
- Next place fish in 2 oz of almonds blanched and chopped, 2 oz crushed pecans, 2 oz coconut and 4 ozs of panco bread crumbs – shake off excess
- Saute fish in a skillet on medium high in ¼ cup of canola oil for 3-4 minutes on each side until golden brown. Preheat oven to 375 degrees for ten minutes. Place fish in oven for 15-16 minutes.
- Passion Fruit Reduction: Reduce by half or until a syrup forms. Spoon on your dish or use on the side
