Lemongrass Chicken Curry

Ingredients

2 large chicken breasts cut into large chunks
1 yellow onion sliced
1 jar curry simmering sauce (I love the Loyd Grossman Korma Curry Sauce- Available at Fresh Market)
1 stalk lemon grass
¼ cup flour
1 cup vegetable oil
2Tbsp butter
½ bunch cilantro
1 cup green onion sliced
½ cup cashews crushed
Jasmine rice

Directions

  1. Hack lemongrass with back of knife, and sauté with onion until onions are golden brown. Remove from pan. Dust chicken with flour. In two batches brown chicken in 1/4cup oil and butter. Drain excess oil from pan and add the onions and curry simmering sauce. Simmer for 15 minutes or until chicken is cooked thru. Serve over rice and garnish with cilantro, green onion and cashews.
