Maine Lobster Cakes

Recipe: Maine Lobster Cakes in the Style of Maryland

Ingredients:
1lb Par Cooked Maine Lobster Tail Diced Small
4 Large Egg Yolks
1/2 Tsp. Minced Garlic
1 Tsp. Minced ShallotJuice of Lemon
1/4 Tsp. Tobasco Sauce
1/2 Tsp. Worcestershire Sauce
1/2 Tbs. Old Bay Seasoning
3/4 Cup Extra Virgin and Canola Oil Blend (50/50)
1/2 Tbs. Smooth Dijon Mustard
2 Tbs. Creme Fraiche
2 Tbs. Chopped Fresh Basil
2 Tbs. Chopped Fresh Parsley
1-1/2 Cups Ground Croissant (Processed in Food Processor)

Directions

  1. In a blender puree the egg yolks, garlic, shallot, lemon juice, Tobasco, Worcestershire, and Old Bay. Slowly drizzle the blended oil into the blender, while running on medium speed. Once all of the oil is incorporated (thick mayonnaise like consistency), remove to a mixing bowl scraping blender with a rubber spatula. Once in the mixing bowl, add Dijon, creme fraiche, basil, parsley, croissant, and lobster meat. Fold together and let rest under refrigeration for 30 minutes. Form into cakes of desired size and bake at 425 degrees until dark golden brown.
