Mango Cashew Crisp

The fresh market cooking in season cookbook

Ingredients

  • 1 cup old fashioned oatmeal (rolled)
  • 1/2 cup packed light brown sugar
  • 1/2 cup flour
  • 1 cup coarsely chopped cashews
  • 1/2 stick unsalted butter at room temperature
  • 1 cup granulated sugar
  • 1 TBSP cornstarch
  • 10 ripe mangos
  • Zest of lime
  • 2 TBSP
  • Fresh lime juice
  • 2 TBSP cold unsalted butter thinly sliced
  • Coconut ice cream

Directions

  1. Preheat oven to 350.
  2. For the Topping: Using your fingers mix oatmeal, brown sugar, and flour together. Add cashews and soft butter and break up until crumbly.
  3. In a separate bowl whisk sugar and cornstarch together in a large bowl. Add mangoes and lime juice and toss gently. Add cold sliced butter.
  4. Pour  into greased baking dish. Sprinkle with topping. Bake about 40 minutes.
