The fresh market cooking in season cookbook
Ingredients
- 1 cup old fashioned oatmeal (rolled)
- 1/2 cup packed light brown sugar
- 1/2 cup flour
- 1 cup coarsely chopped cashews
- 1/2 stick unsalted butter at room temperature
- 1 cup granulated sugar
- 1 TBSP cornstarch
- 10 ripe mangos
- Zest of lime
- 2 TBSP
- Fresh lime juice
- 2 TBSP cold unsalted butter thinly sliced
- Coconut ice cream
Directions
- Preheat oven to 350.
- For the Topping: Using your fingers mix oatmeal, brown sugar, and flour together. Add cashews and soft butter and break up until crumbly.
- In a separate bowl whisk sugar and cornstarch together in a large bowl. Add mangoes and lime juice and toss gently. Add cold sliced butter.
- Pour into greased baking dish. Sprinkle with topping. Bake about 40 minutes.
