Fresh Mahi Mahi
Ingredients
Kosher salt and white pepper to taste
2 tsp. plum sauce
1 tsp. soy sauce
? cup Asian pear, chopped
1 tsp. cilantro, minced
1 tsp. jalapeno or Serrano chile, diced
1 TBSP. red onion diced
1 TBSP. fresh lemon juice
1 tsp. brown sugar
1 TBSP. red pepper, diced
1 mango, diced
julienne or tortilla strips, fried for garnish
papaya, fan shaped (garnish)
Directions
- Season the fish and grill quickly on a non stick surface. Mix all salsa ingredients together, add honey or brown sugar or asian chili sauce if you desire the flavor more spicy.
- Arrange two pieces of Mahi Mahi on dinner plate, leaning on ontop of the other for the height. Spoon salsa in center of fish. Garnish plate with a slight swirl of ceracha sauce (very spicy, warn your guests) and the opposite side with papaya fan.
