Ingredients
1 box Orecchiette pasta, cooked( 1/2 cup pasta water reserved)
1 bunch Swiss chard
1 lb turkey sausage, ground
1/3 cup ricotta cheese
2 TBSP olive oil
1TBSP butter
Pecorino Romano cheese
Salt and pepper
Crushed red pepper
1/2 cup chicken stock
Directions
- Separate the chard leaves from the stems and cut both into bite size pieces. Blanch chard in salted boiling water for 5 minutes and drain well. In a large sauté pan, add olive oil , red pepper, and cook sausage until 3/4 done. Add the chard, red pepper, chicken stock and cook for 5 minutes. Add the pasta, 1/4 cup of the pasta water, butter and toss until well incorporated. Serve in pasta bowls and top with a tablespoon of fresh ricotta cheese and grated Pecorino.
