There are so many fun recipes for fresh summer peaches, both savory and sweet. This dish can be served for breakfast, or even dessert and you can easily use a sugar substitute.
Blend together in food processor until smooth:
Ingredients
1 tub lowfat cottage cheese
1 tsp. almond extract
2 TBSP. powdered sugar
1 8 ounce package low fat cream cheese
Chill at least one hour
4 slices toasted Challah bread
4 TBSP. cinnamon and
4 TBSP. sugar, mixed together
16 large peaches, peeled and sliced
2 TBSP. butter
Directions
- Melt butter and sauté peaches until slightly tender-(Optional— You may add a TBSP or 2 of Amaretto.)
- Toast Challah bread. Spread toast with cream cheese, cottage cheese mixture. Sprinkle with cinnamon/sugar mixture.
- Place under broiler until cheese starts to bubble. Remove and place on serving plate. Top with sautéed peaches.
