Peaches and Cream

There are so many fun recipes for fresh summer peaches, both savory and sweet. This dish can be served for breakfast, or even dessert and you can easily use a sugar substitute.
Blend together in food processor until smooth:

Ingredients

1 tub lowfat cottage cheese
1 tsp. almond extract
2 TBSP. powdered sugar
1 8 ounce package low fat cream cheese
Chill at least one hour
4 slices toasted Challah bread
4 TBSP. cinnamon and
4 TBSP. sugar, mixed together
16 large peaches, peeled and sliced
2 TBSP. butter

 

Directions

  1. Melt butter and sauté peaches until slightly tender-(Optional— You may add a TBSP or 2 of Amaretto.)
  2. Toast Challah bread. Spread toast with cream cheese, cottage cheese mixture. Sprinkle with cinnamon/sugar mixture.
  3. Place under broiler until cheese starts to bubble. Remove and place on serving plate. Top with sautéed peaches.
