Following our musical guest is farmer Ross Taylor from SeaSideGrown of Beaufort, South Carolina. He is my good friend and also a minority partner in a multi-generational female-owned family farm that specializes in tomatoes, blueberries and a host of other mainstay crops for America. We will discuss what is happening with the food chain and whether COVID-19 is putting our food sourcing at risk. Ross will also share how the Taylor family, just weeks ago, started producing hand sanitizer to help fight COVID-19 in South Carolina. We will enjoy a Low Country recipe from his family and talk about their new business of salsas, condiments and epic Bloody Mary mixes.

Thank you to all that tuned in to our 4th episode of WineWednesday. This week we kicked it off with the man who inspired WineWednesday artist Chris Pierce. Chris took us back and performed one of his favorite songs, “The Slow Life,” that he wrote 20 years ago. He also shared how he and his wife Tara are finding new interests and inspirations during shelter in place by getting creative in the kitchen and trying new recipes and his new project where he is writing songs for a new adult and kid friendly album. Chris was so excited and passionate about this project he wrote 5 songs in one morning. This new album is scheduled to be released in Fall 2020. Our next guest was Pit Master Danielle “Diva Q” Bennett. Danielle has won over 400 BBQ awards and is the overall grand champion at the American Royal in the sausage category. Her specialty for WineWednesday was one of her favorite recipes, Chevaps that she paired with our Emblem Cabernet Sauvignon. Danielle’s inspiration during Shelter in Place are her fans. Every day Diva Q goes live on her Facebook page – @Diva Q where she gives a live grilling demo of her recipes. Per Popular Demand Pit Master Danielle “Diva Q” Bennett “Chevaps” Recipe
These beautiful case-less sausages are absolutely delicious and you can change up the flavor in a variety of ways using plenty of substitutions.
11/2 lbs ground beef
11/2 lbs ground pork or lamb
1/2 cup seasoned Italian breadcrumbs
1/2 cup Ajvar or puréed roasted red pepper
1 tbsp baking soda
1 onion very finely minced or grated
1 tbsp dried chives
1 tbsp smoked paprika
1 tsp cayenne pepper (optional)
1 tsp kosher salt
1/2 tsp all spice powder
1/2 tsp black pepper
In a large bowl mix all ingredients to fully incorporate. Fill a piping bag with a 11/2” opening with the meat mixture. Pipe long lines of the meat onto the silicone mat leaving spaces in between each line. Using a bench scraper make indents in the meat every 4 to 6 inches. Freeze sausages onto tray until solid. Place on grill at 350° while still frozen. Grill until 165° internal temperature. Serve with additional ajvar and a sprinkle of feta cheese.
