Ingredients:
8 Roman apples
3 cinnamon sticks
3 star anise
4 cloves
2 cups, light brown sugar
1 cup, sugar
2 cups, butter
2 cups, frozen cranberries
Zest of two oranges
Streusel:
1 cup, butter
1 cup, powdered sugar
1 cup, flour
1 cup, oatmeal
¼ tsp, cinnamon
¼ tsp, nutmeg
½ cup, Pecans (chopped)
Directions
- Apples: Core the center of the apples leaves skin on, then place apples in an oven proof dish. Mix butter, ½ of the sugars, and 1 cup of the cranberries and fill the center of the apples. Then, place cinnamon sticks, star anise, and cloves around the apples. Combine the rest of the sugars with 1 cup of cranberries and the orange zest and add to the apples and bake at 350 F for 30 -40 minutes until apples are soft and hold together.
- Streusel: Soften the butter and add all ingredients together and place on top of apples. Put apples back into the oven until streusel is golden brown.
- Serve: Serve warm with the cranberry jus and a scoop of vanilla ice cream; garnish with cinnamon sticks and star anise.
