Apple Cranberry Asian Pear Cake with brown butter – Thanks to the wonderful box of produce delivered from White Picket Produce, I have crisp fresh apples, cranberries and Asian pears for my seasonal cake.
Directions
1 cup white sugar
1 cup brown sugar
3 eggs beaten
1 cup oil
2 teaspoon vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon ground cloves
2 teaspoons ground cinnamon
2 cups peeled diced apples
2 cups peeled diced pears
3/4 cup fresh cranberries
Topping
1/2 cup brown sugar
1/4 cup milk
1/4 pound butter
Directions
- Mix all cake ingredients by hand. Pour into greased 13×9 pan and bake at 350 for 45 minutes.
- Remove from oven.
- Make cinnamon whipped cream.
- Topping: Mix ingredients in sauce pan and bring to slow boil for 3 minutes. Pour over the cake and return to oven for 4 minutes.
- Cool slightly. Top with cinnamon whipped cream.
