Ingredients
6 loin lamb chops
1 cup greek yogurt
Kosher salt
Black pepper
Garlic salt
Fresh Oregano
2 shallots minced
Pistachio oil spray or 1 TBSP olive oil
Directions
- Season lamb and brush with yogurt. Add minced shallots and place in ziploc bag. Refrigerate overnight turning once
- Remove from refrigerator and place lamb on plate. Using a paper towel blot away excess yogurt. Heat oven to 400 degrees. Heat large searing pan. Spray with oil. Sear lamb chops turning once until rate.
- Place lamb pan in oven and roast about 5 minutes
- Microwave Quinoa
- Toss in cooked sweet potatoes cut into cubes
- Chopped skinny french green beans
- 1 cup black walnuts
- Add 1 sautéed onion
- Mix into quinoa
- Add chopped black walnuts
- Toss in dried figs or raisins. Toss and place on platter
- Place lamb chops around edge of platter
- Top with a spoonful of yogurt and mango chutney.
